Spinach/Romaine Caramelized Pecan & Dried Cranberry Salad
Yes, I know that it is a very long name for a salad, but there was no way to help you all know the yummy stuff that was in it without naming it as such. (Also, a very long sentence to defend the name!)
Anyways, I have recently had similar salads like this at certain resturants and had to compile some recipes so that I could create this myself and here it is! I hope that you will make it yourself! ENJOY!
Spinach/Romaine Caramelized Pecan & Dried Cranberry Salad
1/2 pkg. Baby Spinach
1/2 pkg. Romaine Salad Mix
Dried Cranberries
1/2 C. Crumbled Feta, Bluecheese or Goat Cheese (whichever you prefer)
Caramelized Pecans (see recipe below)
Balsamic Vinegar Dressing (see recipe below)
Mix all ingredients together & enjoy!
Makes approx. 4 servings
Caramelized Pecans
1 T. Butter
1/2 C. Pecan Halves
1 T. Brown Sugar
-Melt butter in small pan over low heat & cook 2-3 minutes, stirring constantly until mixture is caramelized. Pour onto waxed paper until cooled.
Balsamic Vinegar Dressing
2 T. Balsamic Vinegar
1 T. honey
Dash of Salt
Dash of Pepper
1/4 C. Extra Virgin Olive Oil
